What is the "Truth in Beef?"
The "Truth in Beef" is about our commitment to serving our guests the absolute best Prime Beef. This means that each beef cut has been verified 100% to be of USDA Prime quality, and aged to our exacting standards. Our proprietary aging process yields a minimum aging cycle of 42 days on all beef cuts, with the exception of our center cut New York strip, which is aged 50 days.
Under the direction of Executive Chef Demetre Castanas, the Grill 225 menu is headlined by 100% USDA Prime Beef and fresh seafood from both local and international waters. We promise classic Prime steak house cuisine, exceptional and innovative desserts, a glamorous ambience and a robust wine selection. Operated by industry veteran Nick Palassis, Grill 225 proudly features the city's most professional and attentive wait staff.

As Charleston's premier steak house, our dinner menu is one of the few left in the country that features 100% USDA Prime Beef. All of our beef selections, including the filet mignon, are hand-selected and wet-aged to ensure tender texture and unsurpassed flavor.
Our dinner menu also features seafood harvested from both local and international waters. We import our seafood from all over the world, like oysters from the Pacific and Atlantic oceans, and Boston lobster ranging from 3-9 lbs. flown in daily.

A Fitting Finale
Fine food deserves an ovation, so we believe dessert is a course all its own. Grill 225's Executive Pastry Chef Gerry Elliot has overseen the Hotel's confections since the beginning, and he has designed Charleston's most extensive menu of divine desserts.
His signature creations include Baked Carolina - a popular dessert that is flambéed table-side and served family-style - and Banana Bread Pudding served warm with caramel sauce and caramel ice cream. The dessert course is thoughtfully prepared and artistically presented, a fitting finale to a masterful meal.
